 Solomon, the wisest man in history said, “Vanity, vanity all is vanity, except good food and drink.” I always liked Solomon and Solomon would have loved the Northwest. From the Salmon run in the Puget Sound and coastal rivers to the cattle ranches of Eastern Washington. From the Dungeness crab on Washington’s coast to the vineyards of the Yakima valley (which by the way, are at the same latitude as the Rhine river in France). Washington produces world class fish, beef, produce and world renowned wines. Even the orchards in eastern Washington’s Okanogan and Chelan counties produce award winning apples. All of which makes for first class dinning in a style that has become known as Northwest Cuisine, an accumulation of culinary techniques from around the world incorporated into our own natural resources.
